Welcome to our kitchen.. Today  we are  going to share a very  popular  tasty gujrati  recipe .. Achari  paneer… A paneer  seasoned  with  achari  tadka  and  dipped  with  soury  soupy creamy   batter of  curd-refine flour  mixture, spiced  up  by green chillies- ginger paste.   Very  easy to make and   taste is  awesome.

Ingredients

  • 200 grams Paneer (cottage cheese)(cut in to ½ inch pieces)
  •  1/2 cup thin  sliced onion ( prefer cut into in a length)
  • A pinch of Cumin seeds
  • A pinch of Fenugreek seeds (methi)
  • 1/2  tea spoon of Mustard seeds
  • A pinch of Onion seeds (kalongi)
  • 2 cups Curd (yogurt)
  • 4 tbsp Refine floor (maida)
  • Salt to taste
  • A pinch of  sanchal  (Black  salt)
  • 1/2 tsp  of turmeric powder (haldi)
  • 1/4 tsp of  mirchi powder
  • A pinch of  hing  (asafoetida)
  • 2 inch piece adrak (ginger)
  • 1 tbsp-green Chillies paste
  • 4 tbsp Refine oil
  • 2 table spoon  finely chopped  green coriander leaves.

Directions

 

  • Crush adrak/ ginger in a grinder or grate it on grater.
  • Take a bowl, mix Maida and curd together. Mix it well till the lumps break.
  • Make a smooth paste. Make  sure  that  there  is  no  any  lump  in  a  batter.
  • Add adrak, Green Chili paste, haldi powder, mirchi powder, salt and 2 cups water.
  • Heat oil in Kadhai.
  • Add cumin, fenugreek, mustard, kalongi seeds, Let them crackle. Add onion. And sauté it for 2 – 3 minutes.
  • Add Maida-curd batter in it, stir continuously up to 10 minutes on medium heat or until the Maida is cook well.
  • Add some extra water if needed.
  • Add paneer pieces on this gravy, and cook it for 2 minutes. Make sure that gravy consistency should be pouring (not  very  thick  not  very  thin)
  • Garnish with finely chopped coriander leaves.

    Aachari paneer is ready to serve with hot roti/paratha and naan.
